Bring to 158 and hold for 45, then bring to a boil for about 60-75 minutes. It was definitely sweet and sticky, but not "gummy". You will probably need to add water a couple times, and stir like hell or else it will burn and stick to the bottom.

Then when the water hits the grains the enzymes start to go into solution and get to work. I've never used flaked rice but I've used flaked maize, wheat, and barley many times without problems. Yes it's good nutritional stuff but these are ingredients you want to minimize in a beer.
